Time and temperature charts

With low-temperature cooking, the aim is to ensure a cooking temperature as close as possible to the desired final internal core temperature of a food (at its heart) when we consider that it is at its perfect point of doneness. This cooking temperature will always be accompanied by a determined cooking time.
Below we offer you some time and temperature charts confirmed by our experience, which will guide you when cooking different types of foods at low temperatures.
These charts have been established taking into account the following aspects:
1. That the temperatures indicated are temperatures of the liquid cooking medium in °C.
2. That the initial temperature for the food that is to be cooked is 5°C (fridge temperature).
3. That many foods will be finished off with a sear that will take them to the optimum point of doneness.
4. That whenever two temperature/time options appear, two cooking alternatives with similar results are being indicated.
5. With some foods, we can cook using two methods:
a) controlling the temperature of the cooking medium + the cooking time.
b) controlling the temperature of the cooking medium and the temperature at the food’s core (heart).
