Marinated sardines with tomato and basil

Introduction

A simple and highly nutritious recipe. By marinating the sardines we make the most of their omega-3 oils while by oven-cooking the tomato we reinforce the lycopene’s anti-oxidant properties, so in a few minutes we can prepare a recipe that is both very healthy and very tasty.

Ingredients

For the sardines:
16 sardines
200 g white wine vinegar
200 g brine (1 l water per 100 g salt)
50 g olive oil
8 basil leaves

For the tomato confit:
500 g ripe tomatoes
100 g olive oil
8 basil leaves
Salt
Sugar

For the the basil oil:
300 g olive oil
15 basil leaves

To finish:

Balsamic reduction
Salt flakes

Step 1

Descale the sardines and clean them. Remove the bones and cut each sardine into two fillets.

Step 2

Immerse them in brine for 5 minutes. Remove and dry.

Step 3

Immerse the fillets in white wine vinegar for 20 to 30 minutes. Drain.

Step 4

Finally let the fillets marinate in mild olive oil together with some basil leaves and store in the refrigerator.

Blanch the tomatoes in boiling water to allow easy removal of the skin.

Step 2

Chop the tomatoes concassé (diced and without the seeds), and place on an oven tray with 100g of olive oil and 8 basil leaves. Let the tomato confit at 80ºC for 40 minutes. Add salt and sugar to taste.

Step 1

Blend the ingredients to reach a fine texture and an intense green colour.

Step 1

Roll up each sardine fillet leaving a hollow in the centre and fill with the confit tomato.

Step 2

Dress with basil oil, fleur de sel or salt flakes and a drop of balsamic reduction.

Step 3

Decorate one side of the plate with a line of balsamic reduction.
